S'Mores Cupcakes...

I found this recipe, over a year ago and had been waiting for the perfect time to make it. When Braley came home with a note saying they were going to  have a classroom campout to celebrate the end of school, I thought here is my chance. 


Approved by S'more expert, Kim McKenzie :) 




You will need: 

graham crackers
sugar- tsp 
butter, 1/2 -1 stick melted
boxed brownie mix, the fudge one works best and ingredients listed on box 
a bag of large marshmallows 
cupcake liner ( I used the aluminum cups that stand alone) 


* Crush a sleeve of graham cracker, add butter and sugar to make a basic crust 
      - drop a spoonful into each cupcake liner and mash down with a cup bottom or similar object 


* Stand up one marshmallow in each cup 


* Mix brownies by instructions on the box 
     - pour into each cup 


Bake at 350 for 15-20 minutes 


Topping: 

Jar marshmallow cream or fluff 
graham crackers 
1 large Hershey bar for garnish 


To top the cupcakes, just add a spoonful of marshmallow cream on top of each one and spread around. Don't try to get all fancy, the heat of the room will melt it down. At this point you can garish or place under the oven broiler and brown the marshmallow, be sure to stand close by and watch carefully. After you choose one of the two options, top with graham cracker crumbs and a chocolate bar square. I stuck the chocolate in while the cupcakes were still warm.
